My boss and I were in town for a two day conference. I spent the first day and a half making dubious decisions health wise on the food front. No regrets but I was craving something healthy. The Healthy Cafe Truck was parked outside the building at lunch time. Thankfully I got to it right before the line took off. After a couple of minutes I turned around and the line was looooong. The bowl of the week featured greens, wild rice and quinoa, tortilla strips, some other healthy stuff, and they allowed customers to swap a chopped up black bean burger for their chicken or ground beef options. They topped it all off with a lime vinaigrette. It ended up being exactly what I was looking for! Truly delicious and made me feel healthy! The staff were friendly and the service was efficient. A great option in the area!
