I recently tried the lemon blueberry cupcakes from Trixie's at the Lehigh Valley Food Truck Fest and was pleasantly surprised by how delicious they were. It was my first time encountering this particular food truck and I was impressed by the quality of the cupcakes. Unfortunately, I couldn't find the truck again to indulge in more of their tasty treats, but I highly recommend giving them a try if you come across them at an event or festival.
