I have only ever had good experiences here, well made pastries, some traditionally italian. I do wish they offered more Italian fare but I also understand that a provincial space like Gainesville prefers M&M cookies to Semifreddo cakes. You can only do so much in Florida.
Regarding some previous reviews, I certainly can understand not having your allergies addressed but who knows what information you gave them. Also, I am not sure why someone would assume that pastries out of a case are hot and fresh out of the oven but that is likely a deficiency of intelligence.
I have never met the owner but some people expect a parade to be thrown because they came into a business, which is a very American trait and ridiculous. Personally, I just want to buy what I came in for and not have a full length, affection-dripping conversation with every transactional interaction but Karens expect someone at every retail establishment to light off fireworks every time they appear.
Everyone I ever interacted with at Dolce Vita has been pleasant enough and willing to accomodate. It's a good bakery with reasonably priced items and fresh.

Ordered a plain and a vanilla cronut. I got an ice cold vanilla and an ice cold chocolate/vanilla. I'm allergic to chocolate and ended up throwing both away because they were cold, not flaky, and not fresh and the chocolate that I'm allergic to contaminated both cronuts and the small piece I did taste was super chewy and not freshly fried like the comments said they are on Saturdays only. Ordered a hot chai latte that was room temperature/lukewarm and threw that away as well. Big disappointing waste of money.

Very rude owner, I don't care how good her bakery items are her behavior is unacceptable.
