About eight years ago, I discovered cemitas during an unforgettable night mission in the LA area, and ever since I've been on a quest to find them in Fresno without success, but during a recent trip to Disneyland, I finally found a brick-and-mortar restaurant specializing in these Oaxacan sandwiches that offered a variety of delicious options, including a traditional Milanesa that was clean and crispy, with perfect bread and stretchy cheese, leaving me eager to return despite the challenges of parking and the busy atmosphere.
