• Andouille $12.50
• One Stick. Approximately 1.5 lbs. Our signature product is a type of smoked sausage in which choice lean pork is cubed rather than ground, seasoned with a little more salt, red pepper, black pepper, and garlic, then stuffed into a larger beef casing. It is then allowed to hang in the cooler overnight to cure, then it is heavily smoked over aged pecan wood for a unique tasting, fully cooked sausage. It is excellent to use for seasoning gumbos, jambalayas, beans, and many other dishes.
• Pork Tasso $12.50
• Three pieces. Approximately 1 lb. 95% lean pork roast, sliced then seasoned and smoked. Great as seasoning meat in many dishes, or as a ready-to-eat snack.
• Hog Head Cheese $7.50
• One block. Approximately 1 lb.Choice lean pork meat boiled with a mixture of seasonings, then jelled in a mold. Available in mild and hot. Great sliced and eaten on crackers, melted in grits, warmed in French bread or anyway you eat it.
• Hog Cracklin $6.50
• One pack.Old fashioned, homemade fried pork skins seasoned with a little salt.
• Smoked Sausage $10.75
• One Loop. Approximately 1.5 lbs.Our own fresh sausage blend of ground pork seasoned with salt, red pepper, black pepper, and garlic then stuffed in the traditional pork casing, which is then smoked to fully cooked perfection over aged pecan wood. Great tasting as a snack and excellent to cook with.
