Returning to North Carolina after living in New Mexico for three years was a culinary letdown. The so-called 'Mexican' food I encountered upon my return was lackluster at best, with a comical mix-up at one establishment leaving me craving authenticity. Thankfully, stumbling upon Taqueria Colima was a true gastronomic revelation, offering flavorful and satisfying dishes that transport me back to the genuine Mexican flavors I've missed.
