I write a lot of reviews, but very few earn a 5-star rating from me. Cactus Flower, however, is by far the best Mexican restaurant in Pueblo, and it deserves every one of those stars. Let me tell you why.
My wife and I visited on a Sunday, arriving just as the doors opened at 11 a.m. Even at that early hour, there was already a crowd eagerly waiting to get in. This place is popular, and it's easy to see why. From the moment we sat down, we were greeted by our friendly and attentive waitress who immediately brought us their homemade chips and salsa. Let me tell you, this salsa isn't just good-it's extraordinary. In fact, it's the best I've ever had. It was so delicious that I couldn't resist ordering a pint to take home. And our entire order arrived in less than 15 minutes!
Now, a quick side note: We were seated in a booth between two other parties-one engaged in a loud political debate, and the other deep into an even louder conversation about bank fraud. One of these groups was also playing loud videos for everyone to hear. To be clear, this is not a reflection on the restaurant, but rather on the inconsiderate behavior of a few patrons. Moving on"¦
I ordered three crunchy ground beef tacos with refried beans and rice, paired with a key lime margarita. My wife opted for three beef flautas with black beans and rice, along with a lemonade.
When I say the food was "tasty," that's an understatement. I'm a huge fan of their tacos, but I had never tried the flautas before. My wife couldn't finish all three, so I got to try one. It was incredible-so much so that it'll be my go-to order next time. The seasoning was spot-on, something that's surprisingly rare in Pueblo's restaurant scene. Cactus Flower deserves a standing ovation for their recipes. The tacos were amazing, but the flautas? They were so good, I overindulged and ended up with a stomach ache (which was entirely my fault for eating too much!). Cactus Flower's food is almost dangerously addictive-once you start, it's hard to stop.
To sum it up, the staff was welcoming, the food was outstanding, and while the prices are a bit higher than average, I'm more than willing to pay for quality that leaves me this satisfied. I'll be sharing my love for Cactus Flower on PuebloPages.com, Google, Yelp, Facebook, & TripAdvisor. Why? Because their food is simply amazing, and everyone should have the chance to experience it.

Had dinner tonight at Cactus Flower. Party of 7. Servings were very large and delicious. Our server was Tara. She was very nice and professional and patient with the 4 year old girl with us. Service was quick for as busy as they were.

My favorite Go to Gal is Natalie! She's Awesome at her job!! Gets our orders right every time!
