Cousin from Canada.
We ordered appetizers and some drinks, then we ordered Pizza, our order was simple, two pizza's per the menu and two pizza's were requested as follows 1- light cheese and 2- the other was requested with out truffles and oil.
We received the light cheese pizza with extra cheese and beyond the top layer you can see the cheese in shredded form underneath (uncooked).
The second pizza had truffles on it but no oil.
I never had a Neopolitan Pizza with shredded mozzarella because you cannot shred fresh mozzarella.
The crust in my professional opinion was not Tipo OO based on the texture and lack of air pockets and char.
When I spoke to the waiter about the Truffles he said that is what we ordered. When the other two pizza's came out it was undercooked with extra cheese. I showed the waiter the pizza and he said I am sorry and walked away.
I paid my bill in full (no adjustments were given or taken and left a $30 tip.
I do not believe this is Italian owned as was the impression given by the owner when I spoke to him. The cheese & dough do not appear authentic. Additionally as a Pizzaiolo since I was thirteen this was not cooked in any form of wood fired or gas fired dome type pizza oven and I have yet to see shredded fresh mozzarella on a Neopolitan pizza.
The waiters performance was a D- the owner stated he was his son when we were seated.
Many sophisticated diners travel through Naples Florida and I would predict they are not fooling anyone.
Apparently two out of four pizza's is not the type of odds I would accept when eating dinner on 5th ave.
