I discovered an amazing dining experience nestled in the remote landscapes west of Escalante, UT, off the beaten path and offering stunning views. The food was exceptional, from the Chile Relleno with Oaxacan Mole to the fresh peaches marinated baby back ribs, all served in a cozy outdoor setting at the Slot Canyon Inn. The attentive service and unique dishes made for a memorable meal that truly exceeded my expectations.
