I have eaten Pho at more than a dozen different restaurants in four different states and the District of Columbia. I have eaten a lot of Pho. I must say Thipp's was hands down the worst I have had to date. I have made Pho at home that was substantially better than theirs. To start I am not sure what meat was but I can say it was definitely quite chewy. I am more accustomed to the meat being rare and thinly sliced not hunks gristle. More importantly the broth was basically just water. I think if they added a bouillon cube to it that would have been a good step forward. I wish I was exaggerating on this point. The broth literally had no flavor at all.
My lunch companion had the Banh Mi sandwich. The bread was so bad she finally decided to just eat the filling out of it with a fork.
I think what was the most interesting was the reaction I got when I told our waiter that I did not like the Pho at all. He chuckled and said, "Hum, usually it is pretty good." I thought that was a very odd reaction. Given the apparent precipitous drop off in quality from September to October I would guess they are struggling and probably won't be open too much longer
