If you sit in a booth near a window at the IHOP in Starke, Florida, one gets a view of the numerous and various 18-wheelers that drive by on US301.
Of course their breakfast menu is huge. You can get the basic breakfast combos of eggs, ham, bacon, sausage, or French Toast, crepes, waffles from Belgian to Chicken & Waffles. My favorite is the Big Steak Omelette (with a side dish of fruit). OK, I am not a big fan of pancakes. If you are, IHOP offers a very "creative" pancakes collection and satisfying as "comfort food." (To be fair, IHOP offers on their website a .pdf file of "Nutrition Information.") As an alternative, they have a lower-calorie option from their "Simple and Fit" menu. Their "Anytime Menu" for breakfast, lunch and dinner is full of appetizers, sandwiches, Burger Bar, salads, soups, and deserts A kids and 55 plus menu are also available. I get the Blue Cheese and Bacon Sirloin or the Country Fried Steak when I visit often. The "wait staff" is always attentive with their southern friendly attitude.
