I designed this restaurant in 1985. The first two "Fajitas" were in Houston and used the name Fajitas A Texas Celebration. The first one on Greens Road lasted nearly 30 years and this one lasted nearly 34 years. The Concept was sold to an investor group for 6 million dollars in 1985, but they were only able to open 2 units....a 2nd in Houston and this one in Phoenix. Most of the investors were in real estate and oil/gas and went bust because of THOSE investments when interest rates hit 17%. Banks refused to loan them any more money for expansion, not because the Concept wasn't fantastic, but because they were heavily in debt. By the time their fortunes changed..... it seems every corner restaurant in America had fajitas on the menu. The moment was lost for them.....but the Fajita became a mainstay in tens of thousands of restaurants. Some claim to have originated the concept....but NO.....this was the beginning.
